AleSmith Brewing Company, San Diego’s most award-winning brewery. Inspired by the classic ales of Britain and Belgium, AleSmith is a growing artisan brewery whose exquisite craft brews have gathered more awards than any other brewery in San Diego.
About the Brew master: Peter Zien is an accomplished and highly decorated home brewer, who “always wanted to own a brewery.” Since he began brewing in 1995, his beers have earned over 400 medals and honors. In addition, he is San Diego County’s only BJCP (Beer Judge Certification Program) “Master” level beer judge, their highest rating.
In 2002 he purchased the brewery from Skip Virgilio, the founder and original brew master, who was the first San Diegan to bring home gold from the prestigious Great American Beer Festival. Given the extremely high level of talent in the brew house (and that definitely includes Tod Fitzsimmons, Head Brewer), it’s little wonder that AleSmith has become renowned for its best-of-class brews in many different and intriguing styles.

If you’ve ever wondered how we brew the beer at AleSmith, then please join us for a tour of the brewery. AleSmith owner and BJCP Grand Master Beer Judge Peter Zien leads a 1 hour tour and tasting session. Tours of the brewery are conducted on the final Saturday of each month, beginning at 12:30PM.
Please call ahead to make reservations (858.549.9888). The tour is fun and informational, and concludes at the sample bar where you’ll be able to taste the AleSmith line-up of premium ales. Alpine Beer Company opened its doors in the fall of 2002. Years before, an interest in craft brewing developed into an actual goal for the future. There were years of home brew competitions, brew science classes, and extended beer runs thinly disguised as vacations. Always looking for a challenge, Pat apprenticed at a local brewery. He got some hands-on experience, and valuable knowledge. A stroke of good luck gave him the opportunity to purchase a brewing system from a local brewpub. The same system launched the careers of many local brewers.
In November of 1999, Alpine Beer Company started contracting McIlhenneys Irish Red, from AleSmith Brewing Company. Very quickly after that, Mandarin Nectar and Pure Hoppiness were released. These are still the only flavors available in 22 oz. Bottles. (But we’re working on that)
After about nine months of extremely hard work, Pat opened Alpine Beer Company right in the middle of his home town. Just in the nick of time, too, because the AleSmith-to-Alpine commute was killing him. There are approximately six to eight beers on tap at the brewery. These are available for purchase on site, but must be enjoyed elsewhere. Because of the small size of the operation, demand can exceed supply at times. We have a few flavors we make regularly, and seasonal specials that come and go.

Ballast Point Brewing Company is one of San Diego\’s Premiere Breweries. We began as Home Brew Mart in 1992 teaching others how to brew quality handcrafted beer at home. In 1996 our first brewery was installed by New World Brewing Systems in the space behind Home Brew Mart. We opened our 2nd location in 2005 in Scripps Ranch and have since tripled our production.
Both locations have tasting bars for onsite consumption and we sell beer to go. Currently our beer is available in 5 and 15.5 gallon kegs and on tap at the finest restaurants in the San Diego area. The name for our brewery comes from the point where Juan Rodríguez Cabrillo first set foot in California. Located on the Point Loma Peninsula, Ballast Point is considered the gateway to San Diego Harbor. Stones from this area were used as ballast in the cargo holds of sailing ships returning to the eastern seaboard. Many New England streets are still lined with the cobblestones brought back from San Diego. So relax, grab a cold Ballast Point Beer and \”Get the Point!\”

Our goal is to make the best beer possible using traditional, finely-honed brewing and fermentation processes. We have taken a different approach in setting up the Lightning Brewery!First, we decided to focus strictly on premium beers made from only the finest available ingredients, of mostly European styles. We take great pains to internationally source our malts, yeasts and hops. Second, we have decided to invest in a brewing system that allows us to recreate distinctive European beer styles locally. Third, we have decided to use selected strains of yeast for each of our beer styles. We do not have a “house strain” of yeast. Instead we use separate yeast strains to ferment our Kölsch, Lagers, Hefeweizen, Porter, and Ales. Finally, we ferment and age each of our beers with their own yeast long enough to allow the yeast to uptake and smooth out many of the rough aromas and tastes associated with young beer.
At Lightning, we are focused on being a brewery that does not follow-on the great beers made by other breweries in San Diego County, rather, we pride ourselves on extending the spectrum of great beers made here. Added throughout, in the implementation of our philosophy, is the adage of “Better Beer Through Science.” We strive to make truly great beers in a way that is robust and reproducible.
Inside The Lightning Brewery
We have invested heavily in our brewing equipment. We modified our brew kettle so that it also serves as our mashing vessel. This allows us to perform what is called “Step Mashing,” a more labor-intensive brewing process that requires taking the mash mixture to predetermined temperatures where specific biochemical reactions are favored. Our techniques further add flavor and character spectrum, to our beers.We’re the only local brewery that has a separate decoction vessel for boiling up part of the mash made by mixing milled malted grain and water. This allows for more release of the starches from the malt and further enhances the body of the beer by extracting some starches that are not metabolized by the yeast. These starches persist in the beer after fermentation, dramatically enhancing and prolonging the finish.
Finally, we have complemented our brewhouse with a boiler to provide steam heating. Steam heating prevents scorching of our mash mixtures or over boiling wort. Coupled with the size of our 50 barrel mash and brew kettle, this allows us to boil upwards of 35 barrels of wort per brew cycle to make up to 1000 gallons of hopped wort ready for fermentation.
Style Directions at Lightning
We make beers that focus more on the malt and yeasts used in our beers rather than the aromatic and bittering hop components. Thats not to say that we do not fully hop our beers and that some of our beers are not fairly bitter, but, we work hard to create a fine balance in our beers.The Science of Brewing and Fermenting Premium Lightning Beer
We have a sharp focus on the brewing process, where the sugars are extracted from the grains used to make the beer and the hops are added prior to fermentation. We have invested a great deal of time and energy in developing a clearer understanding of the biology of the yeast associated with the fermentation process and then the biochemistry and chemistry required to finish and package the beer.In order to further explain our position, we would like to share a little brewing history. The first physical evidence that man has made beer dates to about 3,500 BC. Since cereal crops were grown thousands of years earlier, close to the end of the last Ice Age, it is usually presumed that the first primitive beers were brewed shortly after that.
One of the attributes that has likely contributed to the success of beer as a common beverage is the fact that beer is stabilized. That is to say, beer is one of the first beverages identified that does not readily spoil. Instead, beer is stabilized by the fermentation process. By a partial and limited “spoilage” by yeast fermentation, beer becomes resistant to action by many other microorganisms. This is particularly true when air is excluded from the beer by storage in air-tight containers.
If we fast-forward 5,000 years to the European Middle Ages beer making has seen a remarkable revolution. By this time, incremental improvements in the brewing process have resulted in the implementation of the German Purity Act of 1516 (the Reinheitsgebot). This allowed beer to only contain water, malted grain, and hops. (Malted grain is grain that has been sprouted and then kiln-dried. This allows the starch in the kernels to be partially broken down, then the kilning stops the process allowing the sprouted grain to have an extended shelf life.) Hops were used as an early anti-bacterial agent to extend the shelf life of newly fermented beer when brewed under the relatively unsanitary conditions used at the time.
Interestingly, yeast was not originally mentioned in the Reinheitsgebot since it was provided as a residue from the wooden vats used for beer fermentation. After yeast was discovered to be the organism responsible for fermentation, the act was amended to include the addition of yeast.
Other countries, including the United States, allow for the use of clarifying additives, shelf life extenders, body-enhancing compounds and foam stabilizers. At the Lightning Brewery we only use water, malted grain, hops, and yeast.
In fact, instead of adding a mineral acid (phosphoric acid or sulfuric acid) to acidify our wort for making German-style beers, we make our own acid. This sounds like a “fifth ingredient,” but under the German Purity Act we perform exactly the same procedures as German breweries.
We take unhopped wort and add to it a strain of lactobacillus that naturally occurs on the surface of malted grain. By combining them and allowing fermentation to occur the sugar in the wort is converted to lactic acid. We then take a predetermined amount of this mixture and use it to acidify our German-style beer worts. The residual bacteria is removed by boiling and the beers that result have a crisper and freshening finish.
Like many of the European breweries, we further harden our water with gypsum for making Ales. With all of our beers, we naturally carbonate by trapping carbon dioxide evolved through the fermentation process and allow it to dissolve into the beer. This natural carbonation process makes for a finer and cleaner tasting carbonation and a soft persistent foam head.

“For Sinners and Saints alike,” signals the creation of a line of newly branded beers from The Lost Abbey Brewery. These inspired beers will be made by Port Brewing Co. at their brewing facility in San Marcos, CA.
In the beginning there was Adam and Eve in the Garden of Eden. They were told not to eat the fruit from the apple tree. It was off limits and the fruit was forbidden. They were tempted by the serpent and made a “choice” to eat from the tree. Their actions were not preordained but rather the actions of beings with free will. We have all been given free will and it is this notion of free will that affords each of us the opportunity to make choices in our lives. At every fork in the road, there are signs marking the struggle of Good vs. Evil. The Lost Abbey was imagined as part of a crusade in this ongoing story of Good vs. Evil beer. Everywhere we turn these days, there is a battle being waged between those who make good beer and those who make evil beer (bad beers). But, how did we get here? Why us? Why these beers? Do you want to join our crusade?
A few years and beers ago, Vince Marsaglia (one of the owners of Pizza Port) was inspired by the numerous Abbey Style beers that he tasted. An idea was born out of these beers and that idea was a brewery project called The Lost Abbey. For many years the project existed only as a name. It remained in concept form only. For Vince, there would be no “Real” Abbey property involved and therefore from the beginning was the brewery was “Lost.” Vince felt that there would be a range of beers produced with a nod to the monastic brewing tradition of Belgium. The one problem was his vision lacked someone who could make the beers. This changed in 1997 when Tomme Arthur was hired by Pizza Port Solana Beach. In November of that year he released Dubbel Overhead Abbey Ale which was the first Belgian Style beer ever brewed by Pizza Port.
A series of Overhead Ales was developed and many other Belgian inspired beers soon followed. Tomme gained a reputation in the brewing industry and with consumers for his interpretation of classic Belgian Style beers as well as a cult like following for some of the most imaginative free spirited beers brewed in the USA. The emergence of the burgeoning San Diego Breweries along with an American Craft Brewing scene spearheaded by breweries like Dogfis Head, Russian River, Southampton Public House, Avery, Allagash and Pizza Port helped foster a movement towards small scale single batch unique beers.
Tomme and Vince began formulating a plan to bring these beers to a wider audience after many years of small scale Pizza Port brewing. Beers such as Cuvee de Tomme, Le Woody, Late Harvest, SPF 8 and SPF 45 Saison and many others uniquely crafted beers would finally be made available on a larger scale allowing more people to taste the vision in each bottle. All of these creations have been developed with a flavor first philosophy of brewing. This method of brewing focuses efforts on process driven beers where thinking outside the box and equally as important, brewing outside the box are the hallmarks of a visionary style of brewing.
One of the biggest hurdles to making these beers more widely available was conquered in 2005 when Vince and Gina Marsaglia (owners of Pizza Port) formed a new brewery entity with Tomme Arthur and Jim Comstock of Comstock and Associates to open Port Brewing San Marcos. This new brewery facility is located in a warehouse in San Marcos, CA. that was formerly occupied by Stone Brewing Co. In this new facility both Port Brewing Beers (production beers for Pizza Port) and The Lost Abbey beers will be made.
This new brewing facility is a 3 vessel 30 bbl brewery capable of making over 5000 bbls of beer each year. In addition to the brewery equipment purchased from Stone, The Lost Abbey will open with an additional 80-100 American and French oak barrels that will be used for the aging and maturation of a Signature line of Non Denominational Ales- beers imagined and brewed to no one particular style.
With another nod to Belgium, The Lost Abbey beers produced will be bottle conditioned and packaged with a hood and wire cork finish that is very common in Monastic and Farmhouse Ale production. This style of finishing bottles is more expensive and labor intensive than a classic crown bottle cap but worthy of our time and attention.
Many of the beers that have been produced at Pizza Port over the last 8 years will be converted to The Lost Abbey brand enabling these beers to be marketed and sold across a wider audience of restaurants, shops, bars and pubs. Your favorite Pizza Port beers will remain unchanged but will be repackaged and branded as beers of The Lost Abbey as we integrate them into a new and evolving line where the sky is the limit.
We ask you to join us on our crusade to make locally brewed beers in the most imaginative and flavorful ways possible. History of Mission Brewery
The original Mission Brewery was one of the first commercial breweries in San
Diego, and opened in 1913. Like thousands of other breweries across the United
States, it closed its doors due to Prohibition.The brewing company was re-opened by Dan Selis in June of 2007
and is off to a promising start. Four months after opening, Mission Brewery was awarded two
national medals at The Great American Beer Festival®. And right before its one year anniversary,
Mission won 4 medals at the San Diego County Fair. In its 2 1/2 year history, Mission has won 10 professional medals.In February of 2008, Mission began distributing its award winning beer in San Diego, and production has been increasing ever since. Good Times Gold- Our lightest beer is crisp and refreshing, yet malty and flavorful. It is brewed with pilsner malt and European hops.

December’s Beer of the Month: Saint Sideburn Winter Ale- Belgian Strong Ales are often named after either a holy figure or the devil himself. Were not sure who this beer is named after. This years St. Sideburn Winter Ale is a rich and delicious Belgian-style dark/strong ale, with wonderful dried fruit and spicy flavors, a touch of dark chocolate plus a satisfying malty sweetness. It is brewed with pilsner, dark crystal and roasted malts and hopped with German Tettnang. Fermented with a special Belgian ale yeast. I have some of this beer aging in a bourbon barrel with Brettanomyces for release in 6-8 months. 7.1% ABV $5.
January’s Beer of the Month: Toumaline Tripel- Traditional Belgian-Style Tripel.
February’s Beer of the Month: Imperial Porter- Big, hoppy, chocolatey.
We still have a few kegs of Hopulent Double IPA left. I am sure we will run out before the end of the month. We will bring it back later in 2010.
Look out for the second edition of our Bourbon Barrel Porter in late January. There are only three keg so get it while you can. We used some of this beer to make a caramel cinnamon sauce for my new years party dessert. Yum.

San Diego Brewing Company

The original manufacturing facility known as San Diego Brewing Company opened in 1896 with much fanfare. A. E. Horton, the father of San Diego, referred to the Brewery as the most important industrial enterprise since he founded the town. It was the largest manufacturing enterprise in the county. The brew house held a 25 horse power engine which operated the elevator, barley mill, mash tun and other apparatus. The mash tun could easily give shelter to twenty five men! The brewery’s fermenting cellar was filled with great tanks full of amber fluid, foaming and sparkling. The capacity of the plant was 75,000 barrels. San Diego Brewing Company delivered their product to all parts of the city and county in bottles or in barrels. Their beers were said to “sparkle like nectar”. Sadly the company was removed from 32nd Street by the Navy in 1942 and replaced by a base for the Pacific Fleet. Today the new San Diego Brewing Company hopes to carry on the tradition that was started so long ago. Along with an assortment of fresh beers brewed on the premises, San Diego Brewing Company offers fifty taps of beer every day, providing a brew to satisfy each and everyone.
